Huiji 'New Year Steamed Fish'

White pomfret: 1 pc (about 550g)
Sze-chuan pickle: 1 pc (washed, soaked & shredded)
Young ginger: 1 pc (remove skin, shredded)
Red chilli: 1 pc (cut into ring)
Green chilli: 1 pc (cut into ring)
Fresh mushroom: 3 pcs (washed & shredded)
Huiji Waist Tonic: 1 cup (Huiji measuring cup)
Spring onion: 3 stalks (shredded)

Seasoning: (mix well)

Water: 3 tbsp
Sesame oil: 1 tbsp
Sour plum pickles: 4 nos. (seeded, mashed)
Soya sauce: 1 tbsp
Sugar: 1 tsp


  1. Clean fish, place fish onto a steaming plate
  2. Spread sze-chuan pickle,young ginger,red chilli,fresh mushroom and green chilli overfish accordingly
  3. Pour seasonings overfish
  4. Steam for 15 min at high heat or till fish is cooked, turn off heat
  5. Remove, pour 1 cup of Huiji Waist Tonic over fish
  6. Sprinkle spring onion shreds on top and serve
